Dear visitors, dear customers, der colleagues from the hospitality industry,

if you look up the word "specialised trading", you will come across terms such as specialist shop, depth of range or even advisory competence. As a customer of a specialty store, you expect a range of additional services to accompany the range of goods in addition to a specialized assortment. It is this overall competence that rounds off a specialised trade service and guarantees the customer needs-based advice on all aspects of his or her application profile, because the memory of low quality lasts longer than the brief joy of the lowest price!

A small ramequin dish costs about 1,30 EUR in our shop and is due to its quality and composition much better than many cheaper competitive products. Depending on what is prepared in it, the cost of one single parfait will uickly suprpass this amount. A pâtisserie au fromage succeeds better in a mould with a strong relief of "cooking ribs" than in a stupid round dish. Why this is so, we expect to find out from the seller.

So you enter the shop as an entremetier, saucier, patissier, chef, F & B manager or simply as the owner and see us facing the young, committed saleswoman. You would like to know if this casserole can also be used to gratinate the terrine in a salamander, or if the Legume is suitable for serving a supplement on a rechaud. The face of the charming lady...you know it!

 

We have been training since 1968, and since 1997 we have been selling "only" porcelain. In comparison to many HoReCa-dealer this wide of assortment is very low! And yet we do not manage to impart to our trainees within three years the basic commercial knowledge, the specialist knowledge about porcelain and the industry knowledge of our users in equal measure. Driven by cost and sales pressure, the experienced key account manager still manages to attend training courses at Rational, Winterhalter or Panasonic at most. Capital goods are worth more than 12 Ramequin bowls at 15.60 EUR. The few cents left over from the specialist trade do not even pay for putting them on the shelf.

Porcelain, often a member of "low-budget goods", have wandered with baking brushes, Dariol molds, cookie cutters and ramequins, leaving the specialized trade piece by piece and meanwhile cataloguing in unbelievable printed books of 300 pages and more in the mail order business. Often between table linen, garden furniture and pizza boxes, occasionally according to the motto "mass instead of class" and occasionally between leftovers & junk. The online trade thinks only in AdWords and web content and the traditional HoReCa-trade leads a chanceless fight against Amazon & Co. Since 2010 the recipe is called omnipresence through multichannel distribution! Stationary trade + field service + mail order by catalogue + internet = sales success. The locusts think similarly: When the field is eaten away, it simply draws larger circles. The problem is that all locusts think like that.

This - or something like this - is how ramequins are sold today and nobody knows what is the real function of the relief.

Our profession is our passion. We think it is a pity that important and valuable product knowledge gives way to a red pencil. Especially because the history of porcelain is inseparably connected with the history of hospitality! We are not interested in selling the cheapest porcelain. We act according to an honest and thorough needs orientation! It is not necessary to explain that a "Schnitzel" can be served on that a plain white plate. A hospital cup from Bauscher does not turn "yeast Coffee" to an aromatic experience drink! But it is worth to tell what is a relief on a ramequin and why it is the important detail for a real professional ramequin.
