Material:
This item is made of feldspar porcelain, one of the oldest and most proven materials for degusting and presenting food and hot drinks. Because of the high firing temperature and the resulting hardness and density, it is also called hard porcelain. Feldspar porcelain is always oven-safe, suitable for the microwave and dishwasher-safe.
Quality level:
This item is classified into the quality level High Quality as the best sorting with a ratio of approx. 95/5 a-b-grade. The glaze is even and shiny. The item is free from visual flaws. In very few cases minor pinholes or light refractions can still be seen when reviewed carefully. As porcelain is a natural product, the item is "top" but not "perfect". This quality level is comparable e.g. with Bauscher, Schönwald, Rosenthal, Villeroy & Boch, RAK and many other well-known premium brands.

This article is a set of 2, consisting of the soup bowl AU 525 and the saucer AU 417 with double mirror. We strongly recommend this set because the lower one is exactly adapted to the needs of the upper one. The AU series soup cup has a filling volume (line full of water) of 0.30 l, i.e. 300 grams. It can therefore easily hold soup portions of between 230 and 280 grams, depending on the filling volume. According to our taste, these are portion sizes of a starter soup (soup as a starter) or noble soups, like an oxtail (oxtail soup), or cream soup. Due to the extremely heat-resistant High Alumina porcelain, this soup cup is especially suitable for gratinating soups in a salamander, such as Parisian onion soup or gratinated leek soup. Thanks to its thermal shock resistance, pre-portioned soups can even be raised from the cold store, e.g. regenerated. When using the combination steamer, please note the maximum temperature difference of 180 °C. Please do not put pre-cooked soups from the freezer (minus 18° C) into a preheated Convectomat (220° C). For heating, regenerating and reheating, a maximum of 180° C is available as a guaranteed load in the thermal shock-resistant Alumina porcelain. These properties give the High Alumina soup bowls a clear advantage in the banquet and convenience business over conventional porcelain soup bowls. In extensive tests we could not find out that soups, stews and bouillons in High Alumina porcelain stay hotter for longer than in conventional hard porcelain.
What is true, however, is the fact that High Alumina porcelain is about 400% more stable than conventional porcelain. This second advantage gives the soup bowl AU 525 a clear advantage at banquets, in out-of-home catering and especially in the conference and bump business compared to the usual soup bowls made of hotel porcelain.
In its design this soup bowl is plain and smooth, so that it can be used with any other porcelain without any problems. Simply simple and strong. Professionally correct is the stacking capability with the one for the built saucer AU 417. This saucer gives the soup top not only a secure hold on it, but also under it; so it is perfectly designed for the mis en place in the buffet and conference business by preparing the cups in high stacks for the guest service.
Please allow us to point out that serving cereals (muesli), flakes, yoghurt and fruit salads, especially over the breakfast buffet, is equivalent to a professional faux pas. The handles of a soup bowl are exclusively symbolic of a hot soup. Even cold soup bowls (as the name suggests) such as a Gazpacho Andaluz should be served in a bowl without handles. Therefore we offer a II. Variant without handle with the article number AU 530.
The porcelain maker can be assured: Yes, this article is not a soup cup, but a soup bowl. However, since we produce our porcelain for the hotel and restaurant industry, we use their technical term for the sake of simplicity. For chef and waiter, the soup top is a soup cup and a saucer is a saucer.
