How to serve asparagus

We cannot answer the question of how best to cook asparagus or which asparagus tastes best, but we can answer the question of how best to serve asparagus dishes.

Asparagus is probably one of the best known, most popular and gastronomically most important regional seasonal dishes in Germany, Austria and Switzerland. When the weather is favourable, the asparagus season can last up to three months, until it officially closes on the summer solstice.

Fresh asparagus should never be served on a round plate. Asparagus crockery is designed for oval plates and platters, which provide a suitable and supportive frame for this now expensive vegetable. When choosing the right crockery, it is important that the size and presentation of the asparagus as a dish or plate matches the crockery.

Asparagus dishes, i.e. portions presented to two or more people on trays and in bowls, should keep the asparagus warm and firm and separate them from their own juices, as should our porcelain draining trays and drip trays.

Asparagus dishes served on oval porcelain plates or platters should be adapted to the size of the portions and side dishes. Raw ham and cooked ham should be served separately on flat boards next to the main course, so that the customer can cut and portion better and the ham never comes into contact with the sauces or juice of the asparagus. Melted butter, hollandaise sauce, honey-mustard sauces or white wine and herb sauces accompanying the asparagus should be served in sauce boats adapted to the quantity consumed and easily distinguishable by the customer. To avoid unsightly drip stains on the table linen, the sauce dishes should be served on plates that match the tableware.
