Casseroles are an important part of Holst Porzellan's collection of oven-proof porcelain. We make the COC range of casseroles from oval hard porcelain, which has been specially refined for use in the oven. This makes the porcelain casseroles ideal for preparing dishes directly in the oven. We can't answer the question "what cooks best in a casserole?", because there are hundreds of tasty dishes that can be stewed, pan-fried or steamed in a casserole. Mediterranean and French cuisine offer fantastic recipes for roasting, braising and steaming in casseroles.
The particular advantage of porcelain casseroles lies above all in the hygienic and vegan properties of genuine feldspathic porcelain. Iron pans, enamelled pans and even low-fired ceramic pans can transmit foreign substances to the food being roasted and cooked, especially if the surfaces are damaged. Porcelain pans are 100% nickel-free and emit no oxidising foreign substances, even at high temperatures.
White porcelain casseroles are served straight from the oven onto the table. The brilliant white porcelain particularly enhances the crusts and caramelised layers of gratins, baked dishes, braised dishes and tarts, and gives the dishes an effect that no other colour can match. Particularly colourful casseroles, in red, orange or blue cast iron, overpower the appetising play of colours in baked dishes.
There are five different sizes in the Holst Porzellan casserole collection. 0.15 l for small appetisers, mini soups, dips and refined starters, 0.40 l for preparing and serving portions, 0.65 l for gratins, stews and desserts, 1.1 l for two to three people and even a 2.9 litre casserole. All Holst Porzellan casseroles have a flat base to ensure that heat is transferred without loss to hobs, hotplates and Front-Cooking. This makes them ideal for serving meals and hot buffets. Thanks to the porcelain lid, the casseroles are also 100% hygienic to transport in meal lifts, in room service and on long journeys to customers.
Important instructions for use
Despite the high temperature resistance of oven-proof porcelain up to 350°C, porcelain casseroles, like their ceramic or metal cousins, must not be subjected to thermal shock. Do not place a cold casserole in an oven preheated to over 80°C, and do not place casseroles filled with frozen food on hot baking trays or stones. If you follow these rules, you can use porcelain casseroles almost indefinitely, as porcelain retains its optical and hygienic stability, unlike all other materials.
